Bison Meatballs with Cilantro Sauce

It’s nice to have recipes in your repertoire that can play double duty. Something simple, fast, and tasty that can be used for a number of occasions and meals. This recipe is great as an appetizer or the start of a basic meal. The sauce is easy and ties the whole thing together with great flavor. Plus, it gives me the opportunity to use bison – one of my favorite meats. It can be a little more expensive, but it’s lean and moist and tasty and worth the slight extra cost. The recipe looks like but its so easy – just mix to combine for both the meatballs and the sauce.

Bison Meatballs with Cilantro Sauce

Leftover Potential: The sauce is served cold, and keeps well. The meatballs can be reheated in a snap, and stay nice and moist.

Bison Meatballs
1 Tbsp olive oil
1/2 onion, finely diced
3 cloves garlic, finely minced
1/2 cup bread crumbs
salt, as needed
pepper, as needed
red pepper flakes, as needed
1 tsp cumin
2 tsp sage
1 tsp curry powder
1/4 cup cilantro, roughly chopped
1 egg
2 Tbsp Greek yogurt
juice of 1 lemon
1 lb ground bison
2-3 Tbsp olive oil

1. In a small pan, heat the oil over medium high heat. Add the onion and cook until translucent. Add the garlic and cook until fragrant. Remove from the heat and allow to cool completely.
2. Moisten the bread crumbs with a little bit of water. Season with all the spices, then mix to combine.
3. Add the egg, yogurt, and lemon juice. Combine well.
4. Add the bison and mix well to combine. Form the mixture into balls and set aside.
5. Heat a large saute pan over medium heat, and cook the meatballs on each side until cooked through.

Cilantro Sauce
1 1/4 cup cilantro
1 tsp cumin
1/2 cup Greek yogurt
1/2 bunch green onions
1 tsp sage
salt, as needed
pepper, as needed

1. In a blender, combine all ingredients. Season with salt and pepper to taste. Reserve until needed.

  1. This looks great. Bison is supposed to be really healthy, and all the yogurt makes this a really healthy and delicious dish.
